ABSTRACT
The
water yam (dioscorea alata) is a good source of calories which is currently the
most importation source of energy. This study was conducted to evaluate the
proximate composition of water yam. The proximate analysis showed that the
nutrients present in water are moisture content, crude fat content, cellulose
content, ash content and calories which was carried out using association officials
of analytical AOAC (2000) method and cellulose content was determined according
to the gravimetric method of van soeest
(2000). the result showed that moisture content was 38.3%, crude fat 15..6%, cellulose 48.2 %
ash, 40%. And caliories 42 .2% the crude fat was extracted using n-hexane.
